Vineyard Notes: Layer Cake Cabernet Sauvignon was made from select vineyard sites in California combining richness and big fruit flavors with classic structure and tannic power.
Climate: California is famous for its warm days and cool nights, maintaining good natural acidity while the ripeness levels rise.
Winemaking Notes: We fermented this using hand punch downs and gentle pumpovers; then transferring some to French oak for aging. The biggest structured, most powerful lots were put into new French oak for aging to balance the tannins and extract the rich flavors from the barrique. Some lots that would benefit from the softening effect of time in oak were put into French barrels that were used to age. By carefully blending the different lots, varying oak types and different vineyard lots, we created a balanced and complex wine.
Tasting Notes: Beautiful deep garnet color. Aromas of blackberry, cassis, violets, cedar, tobacco, and hints of minerals and graphite. Sweet, densely packed and
creamy in the mouth, but with firm, underlying structure that gives lift to the dark berry, chocolate, and coffee flavors. This is a very lush, soft, complex wine that coats the palate and spreads out on the long, lingering finish.

|Wine maker notes
|When we set out to make Layer Cake Cabernet the goal was the same as the other Layer Cake red wines: find great vineyards that allow us to make a rich, delicious wine that tastes like $50, but costs less than $20.
We tasted fruit from vineyards in the best regions of California, eventually settling on two main vineyards; one in Sonoma County’s Alexander Valley and one in sunny Paso Robles. The diversity of these two vineyards allows us to make a final blend that expresses the concentration, complexity and richness Layer Cake fans have come to expect.
|Layer Cake Wines are about affordable luxury. We set out to make wines that over-deliver. We fly around the world, selecting vineyard sites and hand-making wines to be sure they are true to the grape variety and the region, but never lose that stylistic thread through them that tells you, yes, this is a Layer Cake Wine.
Layer Cake Wines are made on four continents and in five countries. Just when other California winemakers are settling into a nice Hawaiian vacation, we are boarding planes bound for Australia and then Argentina for harvest in the Southern Hemisphere. At the end of summer, we hustle to Italy and then Spain for the harvests there, before returning to California to make the wines here at home. Without question, our team is the hardest-working bunch in the wine business.
All of this hard work is a direct result of the constant positive feedback from you, our loyal fans. We continue to strive for better and better wines every year.
