The climate in this area is Mediterranean but with some continental influence. The mountains act as a natural barrier to the maritime influence, which causes a large temperature variation between day and night. In general, there are cold winters and hot dry summers. This wine is a blend of the two standard varieties of the area of Montsant, Grenache and Carignan, with a small percentage of Syrah. The vines have an average age of 40 years. The soils are different for each variety: slate soil and limestone for Grenache, sandy, clay soil for Carignan and limestone for Syrah. As for processing, after manual harvesting, vinification of each variety is carried out separately. Maceration-fermentation takes place in stainless steel tanks for 20 days at a controlled temperature of 25 ° C. Finally, Can Blau rests for a minimum of 12 months in new French oak barrels. We recommend decanting an hour before enjoying it.
